Every year, the vineyards around the chapel are the most vigorous and vibrant, even in dry years the vines grow high. The result is consistently the most structured and mineral-driven wines.\u003c\/p\u003e\n\u003cp\u003e\u003c\/p\u003e\n\u003cp\u003e We therefore give the wines the time they need: three years in used barriques, followed by two to three years of bottle aging. Only 300 bottles per vintage.
